How we choose fruit for our Berliner Weisse

For every beer, the first steps on its long and beautiful lifespan start with the writing of the recipe!

With fruited Berliner Weisse's one of the most crucial decisions made while writing the recipe is what fruit to add, and there are three principal factors that we take into account:

1. First, the time of year it is: In the warmer summer months tropical fruits such as pineapple, mango and passionfruit work well. In the colder months darker berries such as cherries, blackberries and blackcurrant may be more fitting. We have already started to plan a cherry based Berliner Weisse for release this winter.

2. Second, what recent Berliner Weisse we brewed: We try to make sure the next batch is different visually and in taste to any recent beers. Our October Berliner Weisse release is a beautiful red raspberry sour - Chamberí Berry - so the cherry based Berliner we're now planning will be a much darker red and significantly different in taste.

3. New creative ideas we have: Be it with concepts - trying to mimic a food (such as a dessert) or a flavour - or trying new fruit blends, the urge to experiment and be creative is ultimately at the heart of everything we brew.
